Those fabrics are perfect! My husband is an architect, and I would use the graph paper to stitch up some building plans for his office!

my preschooler loves embriodery---we are planning a soft book of faces for my sons first birthday. I will do the sewing and iron transfers, she will embroider words under the pictures. the lined paper would most certainly end up there!

Honestly, it is hard to say what I would like to do because I like to feel the fabric, fold it, and stare at it in order to decide what would best compliment them. I think that's why it takes me too long to get started! lol But if I had to go with just looking at them online, I think that they would look very nice as a wall hanging. The lovely Collage scraps would be made into the Super Tote Bag pattern that I bought last week from Anna of Noodlehead blog - because they're the very same fabrics that she used & I LOVE her version enough to be a complete copycat.
